- Water - 250 ml
- Star anise - 1 piece

- Cooking oil - 1 tablespoon
Steps
- Preheat your oven to 160°C (320°F).
- In a heavy-based pot or Dutch oven, heat the cooking oil over medium heat.
- Cut the pork belly into bite-sized cubes and season with salt and black pepper.
- Add the pork to the pot, browning it on all sides for about 5-7 minutes.
- Add the minced garlic and sliced ginger to the pot, cooking until fragrant, about 1-2 minutes.
- Stir in the soy sauce, oyster sauce, rice vinegar, and water, scraping up any browned bits from the bottom.
- Add the daikon radish and star anise to the pot, stirring to combine.
- Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
- Braised in the oven for 60 minutes, or until the pork is tender and the daikon is soft.
- Remove from the oven, taste, and adjust seasoning if necessary.
- Serve hot, garnished with chopped scallions.
