  • Oyster sauce - 15 ml
  • Rice vinegar - 15 ml
  • Water - 250 ml
  • Star anise - 1 piece
  • Scallions - 2, chopped for garnish
  • Salt - to taste
  • Black pepper - to taste
  • Cooking oil - 1 tablespoon

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a heavy-based pot or Dutch oven, heat the cooking oil over medium heat.
  3. Cut the pork belly into bite-sized cubes and season with salt and black pepper.
  4. Add the pork to the pot, browning it on all sides for about 5-7 minutes.
  5. Add the minced garlic and sliced ginger to the pot, cooking until fragrant, about 1-2 minutes.
  6. Stir in the soy sauce, oyster sauce, rice vinegar, and water, scraping up any browned bits from the bottom.
  7. Add the daikon radish and star anise to the pot, stirring to combine.
  8. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
  9. Braised in the oven for 60 minutes, or until the pork is tender and the daikon is soft.
  10. Remove from the oven, taste, and adjust seasoning if necessary.
  11. Serve hot, garnished with chopped scallions.
