  • Rice wine (Shaoxing) - 30 ml
  • Brown sugar - 30 grams
  • Ginger - 10 grams, sliced
  • Garlic - 4 cloves, minced
  • Star anise - 2 pieces
  • Cinnamon stick - 1 piece
  • Water - 300 ml
  • Spring onions - 2, chopped
  • Sesame oil - 10 ml
  • Vegetable oil - 10 ml
  • Salt - to taste

Steps

  1. Heat vegetable oil in a large pot over medium heat and add the minced garlic and sliced ginger. Sauté until fragrant.
  2. Add the pork ribs to the pot and sear on all sides until browned.
  3. Pour in the soy sauce, rice wine, and add the brown sugar, star anise, and cinnamon stick. Stir to combine.
  4. Add water to the pot, ensuring the ribs are mostly submerged. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 1.5 hours, or until the ribs are tender.
  6. Uncover the pot, increase the heat to medium, and let the sauce reduce for about 15 minutes, stirring occasionally.
  7. Once the sauce thickens, adjust seasoning with salt if needed, and drizzle with sesame oil.
  8. Serve the braised pork ribs garnished with chopped spring onions.
