Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 60 ml
  • Rice wine - 30 ml
  • Brown sugar - 15 grams
  • Star anise - 1 piece
  • Ginger - 10 grams, sliced
  • Garlic - 2 cloves, minced
  • Water - 250 ml
  • Pizza dough - 1 ball (approx. 250 grams)
  • Mozzarella cheese - 100 grams, shredded
  • Spring onions - 2, chopped
  • Red bell pepper - 1/2, sliced
  • Cilantro - a handful, chopped
  • Sesame oil - 1 teaspoon

Steps

  1. In a pot, combine pork belly, soy sauce, rice wine, brown sugar, star anise, ginger, garlic, and water. Bring to a boil, then reduce heat and simmer for 1 hour until the pork is tender.
  2. Remove the pork from the pot and let it cool slightly. Strain the braising liquid and reserve it.
  3. Preheat the oven to 220°C (428°F). Roll out the pizza dough on a floured surface to your desired thickness.
  4. Spread some reserved braising liquid over the pizza base, then layer the shredded mozzarella cheese evenly on top.
  5. Slice the braised pork into bite-sized pieces and distribute them over the cheese. Add the sliced red bell pepper and sprinkle with chopped spring onions.
  6. Bake the pizza in the preheated oven for about 12-15 minutes or until the crust is golden and the cheese is bubbly.
  7. Remove from the oven and drizzle with sesame oil. Garnish with chopped cilantro before serving.
