Ingredients

  • Pork shoulder - 300 grams
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2, chopped
  • Water - 200 ml
  • Lettuce leaves (Butter or Romaine) - 4 large leaves
  • Cucumber - 1, thinly sliced
  • Carrot - 1, julienned
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cut the pork shoulder into large chunks and season with salt and pepper.
  2. In a pot, heat sesame oil over medium heat and add minced garlic and ginger. Sauté until fragrant.
  3. Add the pork to the pot and sear on all sides until browned.
  4. Pour in the soy sauce, oyster sauce, and water. Bring to a simmer.
  5. Cover and reduce heat to low. Let the pork braise for about 1.5 hours or until tender, stirring occasionally.
  6. Once the pork is tender, shred it with two forks and mix it with the braising liquid.
  7. Prepare the lettuce wraps by washing and drying the leaves.
  8. To assemble, place shredded pork in the center of a lettuce leaf, topped with cucumber, carrot, and red chili if using.
  9. Sprinkle with chopped green onions and serve immediately.
