Ingredients

  • Pork shoulder - 300 grams, diced
  • Soy sauce - 30 ml
  • Hoisin sauce - 15 ml
  • Rice wine - 15 ml
  • Brown sugar - 10 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Chinese five-spice powder - 1/2 teaspoon
  • Water - 200 ml
  • All-purpose flour - 250 grams
  • Baking powder - 1 teaspoon
  • Warm water - 150 ml
  • Salt - 1/2 teaspoon
  • Sesame oil - 1 teaspoon

Steps

  1. In a bowl, combine diced pork, soy sauce, hoisin sauce, rice wine, brown sugar, garlic, ginger, green onions, five-spice powder, and water. Mix well and marinate for at least 30 minutes.
  2. After marinating, transfer the pork mixture to a pot, cover, and simmer on low heat for about 1 hour until the pork is tender, adding more water if necessary.
  3. While the pork is cooking, prepare the dough by mixing flour, baking powder, salt, and warm water in a bowl until a soft dough forms. Knead for about 5 minutes until smooth.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. Once the pork is cooked, shred it with two forks and mix in sesame oil.
  6. Divide the dough into 8 equal pieces and roll each piece into a circle about 10 cm in diameter.
  7. Place a spoonful of the shredded pork mixture in the center of each dough circle. Gather the edges of the dough, pinch them together to seal, and form a bun.
  8. Place the buns on a piece of parchment paper and steam them in a bamboo steamer or a steamer basket lined with parchment for 15-20 minutes until fluffy.
  9. Serve hot with extra soy sauce or hoisin sauce for dipping.
