Ingredients
- Pork belly - 300 grams, cut into 2.5 cm cubes
- Soy sauce (gluten-free) - 60 ml
- Dark soy sauce - 30 ml
- Brown sugar - 20 grams
- Rice wine (Shaoxing wine) - 30 ml
- Ginger - 10 grams, sliced
- Garlic - 3 cloves, crushed
- Star anise - 1 pod
- Water - 200 ml
- Green onions - 2 stalks, chopped for garnish
- Sesame oil - 5 ml
Steps
- In a large pot, heat the sesame oil over medium heat and add the pork belly cubes. Sear until browned on all sides, about 5-7 minutes.
- Remove the pork from the pot and set aside. In the same pot, add ginger, garlic, and star anise, cooking until fragrant, about 1 minute.
- Return the pork belly to the pot and add soy sauce, dark soy sauce, brown sugar, rice wine, and water. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and braise for 1 hour, stirring occasionally.
- After 1 hour, uncover the pot and increase the heat to medium-high to reduce the sauce for another 15-20 minutes, or until it thickens to your desired consistency.
- Remove the star anise, and serve the pork belly bites hot, garnished with chopped green onions.
