  • Soy sauce - 60 ml
  • Rice wine - 30 ml
  • Water - 300 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2, chopped
  • Brown sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Red chili flakes - 1 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, combine water, soy sauce, rice wine, brown sugar, minced garlic, and minced ginger. Bring the mixture to a gentle simmer over medium heat.
  2. Add the cleaned octopus to the pot and ensure it is submerged in the braising liquid. Cover the pot and let it simmer for about 60 minutes, or until the octopus is tender.
  3. Check the octopus for tenderness by inserting a fork; it should slide in easily. If needed, continue cooking for another 10-15 minutes.
  4. Once tender, remove the octopus from the pot and let it cool slightly before cutting it into bite-sized pieces.
  5. In a frying pan, heat sesame oil over medium heat. Add the chopped green onions and sauté for 1-2 minutes until fragrant.
  6. Add the octopus pieces to the frying pan and toss with the sautéed green onions. If desired, sprinkle with red chili flakes, salt, and black pepper to taste.
