- Brown sugar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 inch, sliced
- Scallions - 2, chopped
- Red chili - 1, sliced (optional for heat)
- Sesame oil - 1 tablespoon
- Water - 250 ml
- Black pepper - 1/2 teaspoon
Steps
- In a large pot, heat the sesame oil over medium heat and add the minced garlic, sliced ginger, and red chili. Sauté until fragrant, about 1-2 minutes.
- Add the octopus pieces to the pot, stirring well to coat them with the oil and aromatics. Cook for about 5 minutes until the octopus starts to turn opaque.
- Pour in the soy sauce, rice wine, and brown sugar, stirring to combine. Add the water and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 40-45 minutes, or until the octopus is tender.
- After simmering, taste and adjust seasoning with black pepper or additional soy sauce if needed.
- Serve the braised octopus hot, garnished with chopped scallions.
