  • Brown sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, sliced
  • Scallions - 2, chopped
  • Red chili - 1, sliced (optional for heat)
  • Sesame oil - 1 tablespoon
  • Water - 250 ml
  • Black pepper - 1/2 teaspoon

Steps

  1. In a large pot, heat the sesame oil over medium heat and add the minced garlic, sliced ginger, and red chili. Sauté until fragrant, about 1-2 minutes.
  2. Add the octopus pieces to the pot, stirring well to coat them with the oil and aromatics. Cook for about 5 minutes until the octopus starts to turn opaque.
  3. Pour in the soy sauce, rice wine, and brown sugar, stirring to combine. Add the water and bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 40-45 minutes, or until the octopus is tender.
  5. After simmering, taste and adjust seasoning with black pepper or additional soy sauce if needed.
  6. Serve the braised octopus hot, garnished with chopped scallions.
