- Bell pepper - 1 medium, thinly sliced
- Broccoli florets - 100 grams
- Green onions - 2, chopped
- Cornstarch - 1 tablespoon (mixed with 2 tablespoons of water)
- Chili flakes - 1 teaspoon (optional)
- Fresh cilantro - for garnish
Steps
- Cook the rice noodles according to package instructions until al dente, then drain and set aside.
- In a large pan, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the julienned carrot and sliced bell pepper to the pan, stirring for about 3-4 minutes until slightly softened.
- Pour in the vegetable broth and soy sauce, then bring the mixture to a simmer.
- Add the broccoli florets and cooked noodles to the pan, stirring to combine and allow the noodles to absorb the flavors for about 5 minutes.
- Stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce thickens.
- Season with chili flakes if desired, then remove from heat.
- Serve hot, garnished with chopped green onions and fresh cilantro.
