  • Ginger - 1 tablespoon, grated
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced
  • Broccoli florets - 100 grams
  • Green onions - 2, chopped
  • Cornstarch - 1 tablespoon (mixed with 2 tablespoons of water)
  • Chili flakes - 1 teaspoon (optional)
  • Fresh cilantro - for garnish

Steps

  1. Cook the rice noodles according to package instructions until al dente, then drain and set aside.
  2. In a large pan, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  3. Add the julienned carrot and sliced bell pepper to the pan, stirring for about 3-4 minutes until slightly softened.
  4. Pour in the vegetable broth and soy sauce, then bring the mixture to a simmer.
  5. Add the broccoli florets and cooked noodles to the pan, stirring to combine and allow the noodles to absorb the flavors for about 5 minutes.
  6. Stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce thickens.
  7. Season with chili flakes if desired, then remove from heat.
  8. Serve hot, garnished with chopped green onions and fresh cilantro.
