Steps

  1. In a medium bowl, mix cornstarch with 50 ml of water to create a slurry and set aside.
  2. Heat a non-stick skillet or wok over medium heat and add sesame oil.
  3. Add minced garlic and ginger to the skillet, sautéing until fragrant, about 30 seconds.
  4. Add sliced shiitake mushrooms to the skillet and cook for 4-5 minutes, stirring occasionally until they begin to soften.
  5. Stir in the green peas and cook for an additional 2 minutes.
  6. Pour in the vegetable broth, soy sauce, and oyster sauce, stirring well to combine.
  7. Bring the mixture to a gentle simmer and cook for 5 minutes to allow the flavors to meld.
  8. Slowly stir in the cornstarch slurry, cooking for another 2-3 minutes until the sauce thickens.
  9. Season with salt and black pepper to taste, then remove from heat.
