  • Vegetable broth - 150 ml
  • Cornstarch - 1 teaspoon (optional, for thickening)
  • Water - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped (for garnish)

Steps

  1. In a large skillet or wok, heat the sesame oil over medium heat.
  2. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced shiitake mushrooms and cook for 3-4 minutes until they start to soften.
  4. Pour in the vegetable broth and soy sauce, bringing the mixture to a simmer.
  5. Add the halved baby bok choy to the skillet, cover, and braise for 5-7 minutes until the greens are tender.
  6. If desired, mix the cornstarch with 2 tablespoons of water to create a slurry, then stir it into the skillet to thicken the sauce.
