Ingredients

  • Shiitake mushrooms - 200 grams
  • Soy sauce - 30 ml
  • Vegetable broth - 100 ml
  • Ginger - 1 tablespoon, minced
  • Garlic - 1 tablespoon, minced
  • Sesame oil - 1 teaspoon
  • Brown sugar - 1 teaspoon
  • Spring onions - 2, chopped
  • Cornstarch - 1 teaspoon (mixed with 2 teaspoons of water to form a slurry)
  • Black pepper - to taste
  • Coriander leaves - for garnish

Steps

  1. Clean the shiitake mushrooms and slice them if they are large.
  2. In a pan, heat the sesame oil over medium heat and add the minced garlic and ginger, sautéing until fragrant.
  3. Add the shiitake mushrooms to the pan and stir-fry for about 3-4 minutes until they begin to soften.
  4. Pour in the soy sauce, vegetable broth, and brown sugar, stirring well to combine.
  5. Bring the mixture to a gentle simmer, cover the pan, and let it cook for about 15 minutes.
  6. Uncover the pan and stir in the cornstarch slurry to thicken the sauce. Cook for another 2-3 minutes until the sauce is glossy and thick.
  7. Season with black pepper to taste and remove from heat.
  8. Serve hot, garnished with chopped spring onions and coriander leaves.
