Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Shiitake mushrooms - 100 grams, sliced
  • Button mushrooms - 100 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Vegetable broth - 200 ml
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Sugar - 1 teaspoon
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  3. In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the sliced shiitake and button mushrooms to the skillet. Stir-fry for about 5-7 minutes until they are tender and slightly browned.
  5. Pour in the vegetable broth, soy sauce, and add the sugar. Stir well and bring the mixture to a gentle simmer for about 5 minutes.
  6. Season the mushroom mixture with black pepper and salt to taste. If the sauce is too thick, add a little more vegetable broth.
  7. Once the rice is done, fluff it with a fork and divide it between two bowls. Top each bowl with the braised mushroom mixture.
  8. Garnish with chopped green onions before serving.
