- Jasmine rice - 150 grams
- Water - 300 ml
- Shiitake mushrooms - 100 grams, sliced
- Button mushrooms - 100 grams, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Vegetable broth - 200 ml
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Sugar - 1 teaspoon
- Black pepper - to taste
- Salt - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a saucepan, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
- In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced shiitake and button mushrooms to the skillet. Stir-fry for about 5-7 minutes until they are tender and slightly browned.
- Pour in the vegetable broth, soy sauce, and add the sugar. Stir well and bring the mixture to a gentle simmer for about 5 minutes.
- Season the mushroom mixture with black pepper and salt to taste. If the sauce is too thick, add a little more vegetable broth.
- Once the rice is done, fluff it with a fork and divide it between two bowls. Top each bowl with the braised mushroom mixture.
- Garnish with chopped green onions before serving.
