Ingredients

  • Portobello mushrooms - 200 grams
  • Shiitake mushrooms - 100 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Brown sugar - 1 teaspoon
  • Vegetable broth - 100 ml
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Burger buns - 2
  • Cucumber - 50 grams, thinly sliced
  • Carrot - 50 grams, julienned
  • Sriracha sauce - 1 tablespoon (optional)

Steps

  1. Clean the Portobello and shiitake mushrooms, then slice them into thick pieces.
  2. In a large pan, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the sliced mushrooms to the pan and cook for 5-7 minutes, stirring occasionally until they start to soften.
  4. Pour in the soy sauce, brown sugar, and vegetable broth. Stir well and bring to a simmer. Cover and let it braise for 15-20 minutes, stirring occasionally.
  5. While the mushrooms are braising, prepare the burger buns by lightly toasting them in a separate pan or oven.
  6. Once the mushrooms are tender and the sauce has thickened, remove from heat and stir in chopped green onions and cilantro.
  7. Assemble the burgers by placing a generous scoop of the braised mushrooms on the bottom half of each bun. Add sliced cucumber and carrot on top, and drizzle with Sriracha sauce if desired.
