- Portobello mushrooms - 200 grams
- Shiitake mushrooms - 100 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Brown sugar - 1 teaspoon
- Vegetable broth - 100 ml
- Green onions - 2, chopped
- Cilantro - 2 tablespoons, chopped
- Burger buns - 2
- Cucumber - 50 grams, thinly sliced
- Carrot - 50 grams, julienned
- Sriracha sauce - 1 tablespoon (optional)
Steps
- Clean the Portobello and shiitake mushrooms, then slice them into thick pieces.
- In a large pan, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the sliced mushrooms to the pan and cook for 5-7 minutes, stirring occasionally until they start to soften.
- Pour in the soy sauce, brown sugar, and vegetable broth. Stir well and bring to a simmer. Cover and let it braise for 15-20 minutes, stirring occasionally.
- While the mushrooms are braising, prepare the burger buns by lightly toasting them in a separate pan or oven.
- Once the mushrooms are tender and the sauce has thickened, remove from heat and stir in chopped green onions and cilantro.
- Assemble the burgers by placing a generous scoop of the braised mushrooms on the bottom half of each bun. Add sliced cucumber and carrot on top, and drizzle with Sriracha sauce if desired.
- Top with the other half of the bun, serve immediately, and enjoy your Braised Mushroom Burger!
