Ingredients

  • Lobster (live) - 500 grams
  • Garlic - 6 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Spring onions - 2, chopped
  • Soy sauce - 3 tablespoons
  • Shaoxing wine - 2 tablespoons
  • Chicken stock - 200 ml
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Coriander leaves - for garnish

Steps

  1. Bring a large pot of salted water to a boil. Add the live lobster and cook for 5-7 minutes until it turns bright red. Remove and let it cool before cracking the shell to extract the meat.
  2. In a large wok or deep skillet, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and half of the chopped spring onions. Stir-fry for about 2 minutes until fragrant.
  3. Add the lobster meat to the wok and sauté gently for another 2-3 minutes to coat it with the garlic mixture.
  4. Pour in the soy sauce, Shaoxing wine, chicken stock, and sugar. Stir well to combine and bring the mixture to a simmer.
  5. Cover the wok, reduce the heat to low, and braise the lobster for 15 minutes, allowing the flavors to meld and the meat to absorb the sauce.
  6. Once cooked, remove the lid and drizzle sesame oil over the lobster. Stir gently to mix.
  7. Season with salt and black pepper to taste. Garnish with the remaining spring onions and coriander leaves before serving.
