  • Cumin seeds - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Soy sauce - 2 tablespoons
  • Rice wine - 1 tablespoon
  • Chicken broth - 250 ml
  • Spring onions - 2, chopped
  • Carrot - 1 medium, sliced
  • Red bell pepper - 1, sliced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add cumin seeds and sauté for 1-2 minutes until fragrant.
  2. Add minced garlic and ginger, cooking for another 1 minute until aromatic.
  3. Increase the heat to medium-high and add the lamb cubes. Brown the lamb on all sides, about 5-7 minutes.
  4. Pour in the soy sauce and rice wine, stirring to coat the lamb evenly.
  5. Add the chicken broth, sliced carrot, and red bell pepper. Bring to a simmer.
  6. Reduce the heat to low, cover the pot, and let it braise for 40 minutes, stirring occasionally.
  7. After 40 minutes, check the tenderness of the lamb. If it's not tender enough, continue braising for an additional 10-15 minutes.
  8. Once the lamb is tender, season with salt and black pepper to taste. Stir in chopped spring onions.
  9. Serve hot, garnished with fresh cilantro.
