- Ginger - 1 inch, minced
- Soy sauce - 2 tablespoons
- Rice wine - 1 tablespoon
- Chicken broth - 250 ml
- Spring onions - 2, chopped
- Carrot - 1 medium, sliced
- Red bell pepper - 1, sliced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add cumin seeds and sauté for 1-2 minutes until fragrant.
- Add minced garlic and ginger, cooking for another 1 minute until aromatic.
- Increase the heat to medium-high and add the lamb cubes. Brown the lamb on all sides, about 5-7 minutes.
- Pour in the soy sauce and rice wine, stirring to coat the lamb evenly.
- Add the chicken broth, sliced carrot, and red bell pepper. Bring to a simmer.
- Reduce the heat to low, cover the pot, and let it braise for 40 minutes, stirring occasionally.
- After 40 minutes, check the tenderness of the lamb. If it's not tender enough, continue braising for an additional 10-15 minutes.
- Once the lamb is tender, season with salt and black pepper to taste. Stir in chopped spring onions.
- Serve hot, garnished with fresh cilantro.
