Ingredients

  • Lamb shanks - 2 pieces (about 500g each)
  • Soy sauce - 60 ml
  • Shaoxing wine - 60 ml
  • Chicken stock - 500 ml
  • Ginger - 20g, sliced
  • Garlic - 4 cloves, crushed
  • Star anise - 2 pieces
  • Cinnamon stick - 1 piece
  • Brown sugar - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - 2 tablespoons

Steps

  1. Heat the vegetable oil in a large pot over medium-high heat. Season the lamb shanks with salt and black pepper, then brown them on all sides in the pot for about 8-10 minutes.
  2. Remove the browned lamb shanks and set them aside. In the same pot, add the ginger, garlic, star anise, and cinnamon stick. Sauté for 2-3 minutes until fragrant.
  3. Add the soy sauce, Shaoxing wine, brown sugar, and chicken stock to the pot, stirring well to combine. Return the lamb shanks to the pot.
  4. Bring the mixture to a simmer, then cover the pot with a lid and reduce the heat to low. Let it braise for about 1.5 hours, or until the lamb is tender and falling off the bone.
  5. Once cooked, remove the lamb shanks from the pot and let them rest for a few minutes. If desired, strain the sauce to remove the solids and reduce it further for a thicker consistency.
  6. Serve the braised lamb shanks topped with chopped green onions and sliced red chili, accompanied by steamed rice or bread.
