Ingredients
- Lamb shanks - 2 pieces (about 500g each)
- Soy sauce - 60 ml
- Shaoxing wine - 60 ml
- Chicken stock - 500 ml
- Ginger - 20g, sliced
- Garlic - 4 cloves, crushed
- Star anise - 2 pieces
- Cinnamon stick - 1 piece
- Brown sugar - 1 tablespoon
- Green onions - 2 stalks, chopped
- Red chili - 1, sliced (optional)
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - 2 tablespoons
Steps
- Heat the vegetable oil in a large pot over medium-high heat. Season the lamb shanks with salt and black pepper, then brown them on all sides in the pot for about 8-10 minutes.
- Remove the browned lamb shanks and set them aside. In the same pot, add the ginger, garlic, star anise, and cinnamon stick. Sauté for 2-3 minutes until fragrant.
- Add the soy sauce, Shaoxing wine, brown sugar, and chicken stock to the pot, stirring well to combine. Return the lamb shanks to the pot.
- Bring the mixture to a simmer, then cover the pot with a lid and reduce the heat to low. Let it braise for about 1.5 hours, or until the lamb is tender and falling off the bone.
- Once cooked, remove the lamb shanks from the pot and let them rest for a few minutes. If desired, strain the sauce to remove the solids and reduce it further for a thicker consistency.
- Serve the braised lamb shanks topped with chopped green onions and sliced red chili, accompanied by steamed rice or bread.
