- Carrot - 50 grams (sliced thinly)
- Snow peas - 50 grams
- Soy sauce - 15 ml (Halal certified)
- Sesame oil - 5 ml
- Spring onions - 2 stalks (chopped)
- Salt - to taste
- White pepper - to taste
Steps
- Soak the dried fish maw in warm water for about 30 minutes until softened, then drain and cut into bite-sized pieces.
- In a pot, heat the sesame oil over medium heat and sauté the ginger and garlic until fragrant.
- Add the chicken broth to the pot and bring to a simmer.
- Stir in the sliced shiitake mushrooms, carrots, and the soaked fish maw into the pot, and let it simmer for 20 minutes to allow the flavors to meld.
- Season the soup with soy sauce, salt, and white pepper to taste.
- Add the snow peas and cook for an additional 5 minutes until they are tender but still crisp.
- Serve hot, garnished with chopped spring onions.
