Ingredients

  • Fish maw - 50 grams (dried)
  • Chicken broth - 500 ml (preferably low sodium)
  • Fresh ginger - 10 grams (sliced)
  • Garlic - 2 cloves (smashed)
  • Shiitake mushrooms - 30 grams (dried, soaked and sliced)
  • Carrot - 50 grams (sliced thinly)
  • Snow peas - 50 grams
  • Soy sauce - 15 ml (Halal certified)
  • Sesame oil - 5 ml
  • Spring onions - 2 stalks (chopped)
  • Salt - to taste
  • White pepper - to taste

Steps

  1. Soak the dried fish maw in warm water for about 30 minutes until softened, then drain and cut into bite-sized pieces.
  2. In a pot, heat the sesame oil over medium heat and sauté the ginger and garlic until fragrant.
  3. Add the chicken broth to the pot and bring to a simmer.
  4. Stir in the sliced shiitake mushrooms, carrots, and the soaked fish maw into the pot, and let it simmer for 20 minutes to allow the flavors to meld.
  5. Season the soup with soy sauce, salt, and white pepper to taste.
  6. Add the snow peas and cook for an additional 5 minutes until they are tender but still crisp.
  7. Serve hot, garnished with chopped spring onions.
