- Cornstarch - 1 tablespoon (for thickening)
- Water - 100 ml (for cornstarch slurry)

Steps
- Soak the fish maw in warm water for about 30 minutes until it softens, then drain and cut into bite-sized pieces.
- In a pot, heat the sesame oil over medium heat. Add ginger, garlic, and sauté until fragrant.
- Add the sliced shiitake mushrooms and carrot, stirring for 2-3 minutes.
- Pour in the chicken broth, soy sauce, and Shaoxing wine. Bring to a simmer.
- Add the softened fish maw and scallions to the broth. Allow to simmer for about 15-20 minutes until the fish maw absorbs the flavors.
- Mix the cornstarch with water to create a slurry. Slowly add this to the pot while stirring to thicken the sauce.
- Season with white pepper to taste. Simmer for an additional 5 minutes.
- Serve hot, garnished with additional chopped scallions if desired.
