  • Ginger - 10 grams, sliced
  • Garlic - 2 cloves, minced
  • Scallions - 2 stalks, chopped
  • Dried Shiitake Mushrooms - 4 pieces, soaked and sliced
  • Carrot - 1 medium, sliced
  • Cornstarch - 1 tablespoon (for thickening)
  • Water - 100 ml (for cornstarch slurry)
  • Sesame Oil - 1 teaspoon
  • White Pepper - to taste

Steps

  1. Soak the fish maw in warm water for about 30 minutes until it softens, then drain and cut into bite-sized pieces.
  2. In a pot, heat the sesame oil over medium heat. Add ginger, garlic, and sauté until fragrant.
  3. Add the sliced shiitake mushrooms and carrot, stirring for 2-3 minutes.
  4. Pour in the chicken broth, soy sauce, and Shaoxing wine. Bring to a simmer.
  5. Add the softened fish maw and scallions to the broth. Allow to simmer for about 15-20 minutes until the fish maw absorbs the flavors.
  6. Mix the cornstarch with water to create a slurry. Slowly add this to the pot while stirring to thicken the sauce.
  7. Season with white pepper to taste. Simmer for an additional 5 minutes.
  8. Serve hot, garnished with additional chopped scallions if desired.
