- Eel fillets - 300 grams
- Ginger - 10 grams, sliced

- Spring onions - 2 stalks, chopped
- Soy sauce (gluten-free) - 50 ml
- Shaoxing wine - 30 ml
- Sugar - 10 grams
- Chicken broth - 200 ml
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon (for thickening)
- Water - 50 ml
Steps
- Rinse the eel fillets under cold water and pat them dry with paper towels.
- In a medium bowl, combine the soy sauce, Shaoxing wine, sugar, and chicken broth. Set aside.
- Heat the sesame oil in a large pan over medium heat. Add the sliced ginger and minced garlic, sauté until fragrant, about 2 minutes.
- Add the eel fillets to the pan and sear on both sides for about 3-4 minutes until they start to brown.
- Pour the sauce mixture over the eel, followed by the chopped spring onions. Bring to a gentle simmer.
- Cover the pan and let it braise on low heat for about 20 minutes, turning the eel halfway through.
- In a small bowl, mix the cornstarch with water to create a slurry. Stir this into the pan to thicken the sauce and cook for an additional 5 minutes.
- Serve the braised eel hot, garnished with extra spring onions if desired.
