Ingredients
- Fresh crab - 500 grams (cleaned and cut into pieces)
- Ginger - 30 grams (sliced thinly)
- Garlic - 4 cloves (minced)
- Spring onions - 2 stalks (chopped)
- Soy sauce - 3 tablespoons
- Shaoxing wine - 2 tablespoons
- Chicken broth - 250 ml
- Sugar - 1 teaspoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the vegetable oil in a large wok or deep skillet over medium heat.
- Add the sliced ginger and minced garlic to the oil, sautéing until fragrant, about 1-2 minutes.
- Increase the heat to high and add the crab pieces, stirring gently to coat them in the oil and aromatics.
- Pour in the Shaoxing wine, allowing it to evaporate for about 1 minute.
- Add the soy sauce, chicken broth, sugar, salt, and black pepper to the wok, then bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the wok, and let it simmer for 20 minutes, allowing the crab to absorb the flavors.
- After 20 minutes, check the crab for doneness; it should be opaque and cooked through. Adjust seasoning if necessary.
- Stir in the chopped spring onions and drizzle with sesame oil, cooking for an additional 2 minutes.
- Serve the braised crab hot, garnished with more spring onions if desired.
