  • Garlic - 6 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Spring onions - 2, chopped
  • Soy sauce - 4 tablespoons
  • Shaoxing wine - 2 tablespoons
  • Chicken broth - 200 milliliters
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste

Steps

  1. Rinse the live crab under cold water and place it in the refrigerator to chill for about 30 minutes before cooking.
  2. While the crab is chilling, prepare the garlic, ginger, and spring onions.
  3. In a large pot or wok, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.
  4. Add the chilled crab to the pot, stirring to coat it with the garlic and ginger mixture.
  5. Pour in the soy sauce, Shaoxing wine, chicken broth, sugar, and black pepper. Bring the mixture to a gentle simmer.
  6. Cover the pot and let the crab braise for about 20-25 minutes, occasionally stirring to ensure even cooking.
  7. Once the crab is cooked through and the sauce has thickened slightly, drizzle the sesame oil over the top.
  8. Garnish with chopped spring onions before serving. Enjoy your Braised Crab with Garlic with steamed rice.
