Ingredients

  • Crab (cleaned and cut into pieces) - 500 grams
  • Black bean paste - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Shaoxing wine (or dry sherry) - 1 tablespoon
  • Garlic (minced) - 4 cloves
  • Ginger (sliced) - 1 inch
  • Spring onions (chopped) - 2
  • Red chili (sliced) - 1 (optional)
  • Vegetable oil - 2 tablespoons
  • Water - 200 ml
  • Sugar - 1 teaspoon
  • Cornstarch - 1 tablespoon (mixed with 2 tablespoons water for thickening)

Steps

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic, sliced ginger, and red chili (if using) to the oil, stir-fry for about 1 minute until fragrant.
  3. Add the cleaned crab pieces to the pan and stir-fry for another 2-3 minutes until they turn slightly red.
  4. Pour in the black bean paste, soy sauce, Shaoxing wine, and sugar, stirring to coat the crab evenly.
  5. Add the water and bring the mixture to a boil, then reduce the heat to low and cover the pan.
  6. Let the crab braise for 15-20 minutes, stirring occasionally, until fully cooked.
  7. Add the chopped spring onions and stir to combine.
  8. Mix the cornstarch with water and pour it into the pan, stirring until the sauce thickens.
  9. Serve hot with steamed rice.
