- Shaoxing wine (or dry sherry) - 1 tablespoon
- Garlic (minced) - 4 cloves
- Ginger (sliced) - 1 inch
- Spring onions (chopped) - 2
- Red chili (sliced) - 1 (optional)
- Vegetable oil - 2 tablespoons
- Water - 200 ml
- Sugar - 1 teaspoon
- Cornstarch - 1 tablespoon (mixed with 2 tablespoons water for thickening)
Steps
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the minced garlic, sliced ginger, and red chili (if using) to the oil, stir-fry for about 1 minute until fragrant.
- Add the cleaned crab pieces to the pan and stir-fry for another 2-3 minutes until they turn slightly red.
- Pour in the black bean paste, soy sauce, Shaoxing wine, and sugar, stirring to coat the crab evenly.
- Add the water and bring the mixture to a boil, then reduce the heat to low and cover the pan.
- Let the crab braise for 15-20 minutes, stirring occasionally, until fully cooked.
- Add the chopped spring onions and stir to combine.
- Mix the cornstarch with water and pour it into the pan, stirring until the sauce thickens.
- Serve hot with steamed rice.
