  • Shaoxing wine - 1 tablespoon
  • Chicken or vegetable broth - 200 ml
  • Sesame oil - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Red chili - 1 small, sliced (optional)
  • Cilantro - for garnish

Steps

  1. Rinse the clams under cold running water to remove any sand or grit. Set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the sliced ginger and minced garlic, and sauté until fragrant, about 1-2 minutes.
  3. Add the clams to the pan along with the soy sauce, Shaoxing wine, and chicken or vegetable broth. Stir well to combine.
  4. Cover the pan and let the clams cook for about 5-7 minutes, or until they open up. Discard any clams that remain closed.
  5. Once the clams are cooked, add the chopped green onions and sesame oil, stirring gently to mix.
  6. For a little heat, add the sliced red chili if desired. Cook for an additional minute.
  7. Remove from heat and garnish with fresh cilantro before serving.
