- Shaoxing wine - 1 tablespoon
- Chicken or vegetable broth - 200 ml
- Sesame oil - 1 teaspoon
- Olive oil - 1 tablespoon
- Red chili - 1 small, sliced (optional)
- Cilantro - for garnish
Steps
- Rinse the clams under cold running water to remove any sand or grit. Set aside.
- In a large pan, heat the olive oil over medium heat. Add the sliced ginger and minced garlic, and sauté until fragrant, about 1-2 minutes.
- Add the clams to the pan along with the soy sauce, Shaoxing wine, and chicken or vegetable broth. Stir well to combine.
- Cover the pan and let the clams cook for about 5-7 minutes, or until they open up. Discard any clams that remain closed.
- Once the clams are cooked, add the chopped green onions and sesame oil, stirring gently to mix.
- For a little heat, add the sliced red chili if desired. Cook for an additional minute.
- Remove from heat and garnish with fresh cilantro before serving.
