Ingredients

  • Chicken thighs - 400 grams
  • Soy sauce - 60 ml
  • Oyster sauce - 30 ml
  • Shaoxing wine - 30 ml
  • Brown sugar - 10 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Spring onions - 2, chopped
  • Chicken broth - 250 ml
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame oil - 1 teaspoon

Steps

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Season the chicken thighs with salt and black pepper, then brown them in the skillet for about 5 minutes on each side until golden.
  3. Remove the chicken and set aside. In the same skillet, add minced garlic and ginger, sautéing until fragrant, about 1 minute.
  4. Stir in the soy sauce, oyster sauce, Shaoxing wine, and brown sugar, mixing well.
  5. Add the chicken back to the skillet, then pour in the chicken broth.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes until the chicken is tender and cooked through.
  7. Once cooked, remove the lid and let the sauce reduce slightly for another 5 minutes.
  8. Stir in sesame oil and garnish with chopped spring onions before serving.
