- Oyster sauce - 30 ml
- Shaoxing wine - 30 ml
- Brown sugar - 10 grams
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Spring onions - 2, chopped
- Chicken broth - 250 ml
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame oil - 1 teaspoon
Steps
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Season the chicken thighs with salt and black pepper, then brown them in the skillet for about 5 minutes on each side until golden.
- Remove the chicken and set aside. In the same skillet, add minced garlic and ginger, sautéing until fragrant, about 1 minute.
- Stir in the soy sauce, oyster sauce, Shaoxing wine, and brown sugar, mixing well.
- Add the chicken back to the skillet, then pour in the chicken broth.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes until the chicken is tender and cooked through.
- Once cooked, remove the lid and let the sauce reduce slightly for another 5 minutes.
- Stir in sesame oil and garnish with chopped spring onions before serving.
