  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Chicken broth - 200 milliliters
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken thighs and sear them for about 5 minutes on each side, until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic, grated ginger, and sliced shiitake mushrooms. Sauté for about 3-4 minutes until the mushrooms are softened.
  4. Pour in the chicken broth, soy sauce, and oyster sauce. Stir to combine and bring the mixture to a simmer.
  5. Return the seared chicken thighs to the skillet, cover, and reduce the heat to low. Let it braise for 20-25 minutes until the chicken is fully cooked and tender.
  6. Season with salt and black pepper to taste. Drizzle with sesame oil and sprinkle with chopped green onions before serving.
