- Ginger - 1 tablespoon, minced
- Spring onions - 2, chopped
- Chicken stock - 250 ml
- Star anise - 1
- Sichuan peppercorns - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat vegetable oil in a large skillet or wok over medium heat.
- Season the chicken thighs with salt and black pepper, then brown them in the skillet for about 5 minutes on each side until golden.
- Add minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
- Pour in the Shaoxing wine, scraping the bottom of the skillet to deglaze it.
- Add soy sauce, brown sugar, chicken stock, star anise, and Sichuan peppercorns. Stir well to combine.
- Add the drained chestnuts to the skillet, then lower the heat to a simmer.
- Cover the skillet and let it braise for about 30 minutes, until the chicken is cooked through and tender.
- Uncover and let the sauce reduce for an additional 10 minutes if desired.
- Garnish with chopped spring onions before serving.
