  • Shaoxing wine - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Spring onions - 2, chopped
  • Chicken stock - 250 ml
  • Star anise - 1
  • Sichuan peppercorns - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Season the chicken thighs with salt and black pepper, then brown them in the skillet for about 5 minutes on each side until golden.
  3. Add minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
  4. Pour in the Shaoxing wine, scraping the bottom of the skillet to deglaze it.
  5. Add soy sauce, brown sugar, chicken stock, star anise, and Sichuan peppercorns. Stir well to combine.
  6. Add the drained chestnuts to the skillet, then lower the heat to a simmer.
  7. Cover the skillet and let it braise for about 30 minutes, until the chicken is cooked through and tender.
  8. Uncover and let the sauce reduce for an additional 10 minutes if desired.
  9. Garnish with chopped spring onions before serving.
