Ingredients

  • Beef brisket - 300 grams, cut into small cubes
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Five-spice powder - 1 teaspoon
  • Star anise - 1 piece
  • Beef broth - 200 ml
  • Carrots - 1 medium, diced
  • Frozen peas - 50 grams
  • Flour - 250 grams
  • Butter - 100 grams, cold and cubed
  • Egg - 1, for egg wash
  • Salt - 1 teaspoon
  • Water - 60 ml, cold

Steps

  1. In a large pot, heat a little oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
  2. Add the beef cubes and brown them on all sides.
  3. Stir in soy sauce, oyster sauce, five-spice powder, star anise, and beef broth. Bring to a simmer.
  4. Add the diced carrots and cover the pot. Cook on low heat for about 1.5 hours until the beef is tender.
  5. Once cooked, remove the star anise and allow the filling to cool. Stir in frozen peas.
  6. In a separate bowl, mix flour and salt. Add cold butter and rub into the flour until the mixture resembles breadcrumbs.
  7. Stir in cold water gradually until the dough comes together. Knead gently, wrap in plastic, and refrigerate for 30 minutes.
  8. Preheat the oven to 200°C (400°F).
  9. Roll out the dough on a floured surface to about 5 mm thick. Cut into circles large enough to hold filling.
  10. Place a spoonful of the beef mixture in the center of each circle, fold over, and seal the edges with a fork.
  11. Transfer to a baking tray lined with parchment paper. Brush the tops with beaten egg.
  12. Bake for 25-30 minutes until golden brown. Serve warm.
