- Cinnamon stick - 1 piece
- Green onions - 2, chopped
- Noodles (wheat or rice) - 150 grams
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat vegetable oil in a pot over medium heat. Sear the beef shank on all sides until browned, about 5 minutes.
- Add minced garlic, sliced ginger, star anise, and cinnamon stick to the pot. Sauté for another 2 minutes until fragrant.
- Pour in the soy sauce and rice wine, stirring to coat the beef evenly.
- Add the beef broth, ensuring the beef is submerged. Bring to a boil, then reduce heat to low and cover. Simmer for 60 minutes until the beef is tender.
- While the beef is cooking, prepare the noodles according to package instructions. Drain and set aside.
- After 60 minutes, check the beef for tenderness. If cooked, remove the beef, let it rest for a few minutes, then slice it into bite-sized pieces.
- Strain the broth if desired, then return it to the pot. Adjust seasoning with salt and black pepper to taste.
- To serve, place cooked noodles in bowls, top with sliced beef, ladle the hot broth over, and garnish with chopped green onions and fresh cilantro.
