Ingredients

  • Fresh abalone - 4 pieces (about 200g total)
  • Soy sauce - 60 ml
  • Shaoxing wine - 30 ml
  • Ginger - 10g, sliced
  • Garlic - 2 cloves, minced
  • Spring onions - 2, chopped
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Water - 200 ml
  • Cornstarch - 1 teaspoon (mixed with 1 tablespoon water for thickening)

Steps

  1. Clean the abalone thoroughly under running water, removing any sand or debris.
  2. In a pot, heat sesame oil over medium heat. Add the ginger and garlic, sautéing until fragrant.
  3. Add the cleaned abalone to the pot, browning them slightly on both sides.
  4. Pour in the soy sauce, Shaoxing wine, and water. Stir in the sugar, then bring the mixture to a gentle simmer.
  5. Cover the pot and let it braise for about 30 minutes, allowing the flavors to meld and the abalone to become tender.
  6. After 30 minutes, add the cornstarch mixture to the pot, stirring gently until the sauce thickens.
  7. Remove from heat and garnish with chopped spring onions before serving.
