- Ginger - 10 grams, sliced

- Green onions - 2 stalks, chopped
- Sesame oil - 1 teaspoon
- Sugar - 1 teaspoon
- Cornstarch - 1 teaspoon (optional, for thickening)
- Water - 100 ml
Steps
- Clean the abalone thoroughly under running water, removing any sand or grit.
- In a pot, combine chicken broth, soy sauce, Shaoxing wine, ginger, garlic, and sugar. Bring to a simmer over medium heat.
- Add the cleaned abalone to the pot and gently simmer for about 30 minutes, ensuring it is fully submerged in the broth.
- After 30 minutes, remove the abalone and set aside, allowing it to cool slightly. Strain the broth to remove ginger and garlic pieces.
- Return the strained broth to the pot and bring it to a simmer again. If desired, mix cornstarch with a little water to create a slurry and add to the broth to thicken it slightly.
- Add the abalone back to the pot and cook for an additional 5 minutes to heat through.
- Drizzle sesame oil over the abalone and garnish with chopped green onions before serving.
