Ingredients

  • Fresh abalone - 200 grams
  • Chicken broth - 250 ml

  • Shaoxing wine - 1 tablespoon
  • Ginger - 10 grams, sliced
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Sesame oil - 1 teaspoon
  • Sugar - 1 teaspoon
  • Cornstarch - 1 teaspoon (optional, for thickening)
  • Water - 100 ml

Steps

  1. Clean the abalone thoroughly under running water, removing any sand or grit.
  2. In a pot, combine chicken broth, soy sauce, Shaoxing wine, ginger, garlic, and sugar. Bring to a simmer over medium heat.
  3. Add the cleaned abalone to the pot and gently simmer for about 30 minutes, ensuring it is fully submerged in the broth.
  4. After 30 minutes, remove the abalone and set aside, allowing it to cool slightly. Strain the broth to remove ginger and garlic pieces.
  5. Return the strained broth to the pot and bring it to a simmer again. If desired, mix cornstarch with a little water to create a slurry and add to the broth to thicken it slightly.
  6. Add the abalone back to the pot and cook for an additional 5 minutes to heat through.
  7. Drizzle sesame oil over the abalone and garnish with chopped green onions before serving.
