Ingredients

  • Bok Choy - 200 grams, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy Sauce - 1 tablespoon
  • Sesame Oil - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Chickpea Flour - 50 grams
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Green Onions - 2, chopped
  • Whole Wheat Slider Buns - 2
  • Sriracha Sauce - for serving
  • Pickled Cucumbers - for topping

Steps

  1. In a pan, heat the sesame oil over medium heat and add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Add the chopped bok choy to the pan, stirring for about 5-7 minutes until wilted and tender.
  3. Stir in the soy sauce, salt, black pepper, and chopped green onions. Cook for another 2 minutes, then remove from heat.
  4. In a mixing bowl, combine the cooked bok choy mixture with cornstarch and chickpea flour. Mix until well combined to form a sticky patty mixture.
  5. Shape the mixture into two equal patties.
  6. In the same pan, add a little more sesame oil if needed and cook the patties over medium heat for about 4 minutes on each side, or until golden brown.
  7. While the patties are cooking, lightly toast the whole wheat slider buns.
  8. Assemble the sliders by placing a patty on each bun, adding pickled cucumbers on top, and drizzling with sriracha sauce if desired.
