- Bok Choy - 200 grams, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy Sauce - 1 tablespoon
- Sesame Oil - 1 teaspoon
- Cornstarch - 1 tablespoon
- Chickpea Flour - 50 grams
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Green Onions - 2, chopped
- Whole Wheat Slider Buns - 2
- Sriracha Sauce - for serving
- Pickled Cucumbers - for topping
Steps
- In a pan, heat the sesame oil over medium heat and add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the chopped bok choy to the pan, stirring for about 5-7 minutes until wilted and tender.
- Stir in the soy sauce, salt, black pepper, and chopped green onions. Cook for another 2 minutes, then remove from heat.
- In a mixing bowl, combine the cooked bok choy mixture with cornstarch and chickpea flour. Mix until well combined to form a sticky patty mixture.
- Shape the mixture into two equal patties.
- In the same pan, add a little more sesame oil if needed and cook the patties over medium heat for about 4 minutes on each side, or until golden brown.
- While the patties are cooking, lightly toast the whole wheat slider buns.
- Assemble the sliders by placing a patty on each bun, adding pickled cucumbers on top, and drizzling with sriracha sauce if desired.
