- Soy sauce (kosher) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Green onions - 2, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- Meanwhile, in a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped bok choy to the skillet and stir-fry for about 3-4 minutes until the bok choy is slightly wilted.
- Stir in the soy sauce, sesame oil, and sliced green onions. Cook for an additional 2 minutes.
- Fluff the cooked rice with a fork and gently fold it into the bok choy mixture. Season with salt and black pepper to taste.
