Ingredients

  • Bok Choy - 200 grams
  • Shirataki noodles - 200 grams
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Red bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. Rinse the shirataki noodles under cold water, then boil them in a pot of water for 2-3 minutes. Drain and set aside.
  2. Heat the sesame oil in a large pan or wok over medium heat.
  3. Add the minced garlic and grated ginger to the pan, stirring for about 30 seconds until fragrant.
  4. Add the sliced red bell pepper and julienned carrot, stir-frying for 3-4 minutes until slightly tender.
  5. Chop the bok choy into bite-sized pieces and add it to the pan, cooking for an additional 2-3 minutes until wilted.
  6. In a small bowl, mix together the soy sauce and rice vinegar, then pour it over the vegetables in the pan.
  7. Add the cooked shirataki noodles to the pan, tossing everything together gently to coat the noodles and vegetables in the sauce. Cook for another 2 minutes.
  8. Serve hot, garnished with chopped green onions and sesame seeds.
