- Shirataki noodles - 200 grams

- Red bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Green onions - 2, chopped
- Sesame seeds - 1 teaspoon, for garnish
Steps
- Rinse the shirataki noodles under cold water, then boil them in a pot of water for 2-3 minutes. Drain and set aside.
- Heat the sesame oil in a large pan or wok over medium heat.
- Add the minced garlic and grated ginger to the pan, stirring for about 30 seconds until fragrant.
- Add the sliced red bell pepper and julienned carrot, stir-frying for 3-4 minutes until slightly tender.
- Chop the bok choy into bite-sized pieces and add it to the pan, cooking for an additional 2-3 minutes until wilted.
- In a small bowl, mix together the soy sauce and rice vinegar, then pour it over the vegetables in the pan.
- Add the cooked shirataki noodles to the pan, tossing everything together gently to coat the noodles and vegetables in the sauce. Cook for another 2 minutes.
- Serve hot, garnished with chopped green onions and sesame seeds.
