  • Cooked Quinoa - 100 grams
  • Chickpeas - 100 grams, mashed
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy Sauce - 2 tablespoons
  • Sesame Oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Bread Crumbs - 50 grams
  • Black Pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Whole Wheat Buns - 2
  • Avocado - 1/2, sliced
  • Sriracha Sauce - to taste
  • Cucumber - 50 grams, sliced

Steps

  1. In a large bowl, combine the chopped bok choy, cooked quinoa, mashed chickpeas, minced garlic, grated ginger, soy sauce, sesame oil, cornstarch, bread crumbs, black pepper, and salt.
  2. Mix all ingredients thoroughly until well combined and the mixture holds together.
  3. Form the mixture into two patties, about 1.5 cm thick.
  4. Heat a non-stick skillet over medium heat and add a little oil.
  5. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, toast the whole wheat buns lightly in a separate pan.
  7. Assemble the burgers by placing a patty on each bun, and topping with sliced avocado, cucumber, and sriracha sauce to taste.
