- All-purpose flour - 200 grams
- Cold water - 80 ml
- Vegetable oil - 50 ml
- Bok choy - 150 grams, chopped
- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 100 grams, grated (optional)
- Egg (for egg wash) - 1, beaten
Steps
- In a mixing bowl, combine the all-purpose flour and vegetable oil. Gradually add the cold water while mixing until a dough forms. Knead for 5 minutes until smooth, then wrap in cling film and let it rest for 15 minutes.
- In a pan over medium heat, add a small amount of vegetable oil. Sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the chopped bok choy and sliced mushrooms to the pan. Stir-fry for about 5 minutes until the vegetables are tender.
- Pour in the soy sauce and sesame oil, then season with salt and black pepper. Cook for another 2 minutes, then remove from heat and let it cool slightly.
- Preheat the oven to 200°C (400°F). Roll out the rested dough on a floured surface into a large circle, about 0.5 cm thick.
- Transfer the rolled dough to a pie dish, leaving some overhang. Fill the center with the bok choy and mushroom mixture, and sprinkle with grated cheese if using.
- Fold the edges of the dough over the filling, leaving the center exposed. Brush the edges with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown. Let it cool for a few minutes before slicing and serving.
