Ingredients

  • All-purpose flour - 200 grams
  • Cold water - 80 ml
  • Vegetable oil - 50 ml
  • Bok choy - 150 grams, chopped
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 100 grams, grated (optional)
  • Egg (for egg wash) - 1, beaten

Steps

  1. In a mixing bowl, combine the all-purpose flour and vegetable oil. Gradually add the cold water while mixing until a dough forms. Knead for 5 minutes until smooth, then wrap in cling film and let it rest for 15 minutes.
  2. In a pan over medium heat, add a small amount of vegetable oil. Sauté the minced garlic and ginger until fragrant, about 1 minute.
  3. Add the chopped bok choy and sliced mushrooms to the pan. Stir-fry for about 5 minutes until the vegetables are tender.
  4. Pour in the soy sauce and sesame oil, then season with salt and black pepper. Cook for another 2 minutes, then remove from heat and let it cool slightly.
  5. Preheat the oven to 200°C (400°F). Roll out the rested dough on a floured surface into a large circle, about 0.5 cm thick.
  6. Transfer the rolled dough to a pie dish, leaving some overhang. Fill the center with the bok choy and mushroom mixture, and sprinkle with grated cheese if using.
  7. Fold the edges of the dough over the filling, leaving the center exposed. Brush the edges with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown. Let it cool for a few minutes before slicing and serving.
