Ingredients
- Black sesame seeds - 100 grams
- Water - 600 ml
- Rock sugar - 30 grams (adjust to taste)
- Soy milk - 200 ml
- Cornstarch - 1 tablespoon
- Salt - a pinch
Steps
- Rinse the black sesame seeds under cold water to remove any impurities.
- Soak the black sesame seeds in water for at least 2 hours, or preferably overnight.
- Drain the soaked sesame seeds and place them in a blender with 600 ml of fresh water. Blend until smooth.
- Strain the blended mixture through a fine mesh sieve or cheesecloth into a pot, discarding the solids.
- In the pot with the strained sesame mixture, add rock sugar and a pinch of salt. Stir and heat over medium heat until the sugar dissolves.
- In a small bowl, mix the cornstarch with a little cold water to create a slurry. Gradually stir this slurry into the pot to thicken the soup, cooking for another 5 minutes while stirring constantly.
- Remove from heat and add the soy milk, stirring until well combined.
- Serve the black sesame soup warm, garnished with additional sesame seeds if desired.
