Ingredients

  • Black sesame seeds - 100 grams
  • Water - 600 ml
  • Rock sugar - 30 grams (adjust to taste)
  • Soy milk - 200 ml
  • Cornstarch - 1 tablespoon
  • Salt - a pinch

Steps

  1. Rinse the black sesame seeds under cold water to remove any impurities.
  2. Soak the black sesame seeds in water for at least 2 hours, or preferably overnight.
  3. Drain the soaked sesame seeds and place them in a blender with 600 ml of fresh water. Blend until smooth.
  4. Strain the blended mixture through a fine mesh sieve or cheesecloth into a pot, discarding the solids.
  5. In the pot with the strained sesame mixture, add rock sugar and a pinch of salt. Stir and heat over medium heat until the sugar dissolves.
  6. In a small bowl, mix the cornstarch with a little cold water to create a slurry. Gradually stir this slurry into the pot to thicken the soup, cooking for another 5 minutes while stirring constantly.
  7. Remove from heat and add the soy milk, stirring until well combined.
  8. Serve the black sesame soup warm, garnished with additional sesame seeds if desired.
