- Coconut sugar - 60 grams
- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Coconut milk - 120 ml
- Vegetable oil - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Water - 30 ml
Steps
- Preheat the oven to 180°C (350°F) and grease a small cake pan (6-inch) with oil or line it with parchment paper.
- In a dry skillet over low heat, toast the black sesame seeds for about 5 minutes until fragrant, then let them cool.
- Once cooled, grind the toasted black sesame seeds into a fine powder using a spice grinder or a mortar and pestle.
- In a mixing bowl, combine the ground black sesame seeds, all-purpose flour, coconut sugar, baking powder, and salt. Mix well to distribute the dry ingredients evenly.
- In another bowl, whisk together the coconut milk, vegetable oil, vanilla extract, and water until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined, being careful not to overmix.
- Transfer the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve the cake as a delightful dessert or snack.
