Ingredients

  • Dried black fungus - 20 grams
  • Vegetable broth - 500 ml

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Snow peas - 50 grams, trimmed
  • Spring onions - 2, chopped
  • Soy sauce - 15 ml
  • Sesame oil - 5 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the dried black fungus in warm water for about 20 minutes until they are rehydrated and soft. Drain and slice into smaller pieces if desired.
  2. In a pot, heat the vegetable broth over medium heat and add the sliced ginger and minced garlic. Allow it to simmer for 5 minutes to infuse the flavors.
  3. Add the sliced carrot and rehydrated black fungus to the broth. Cook for an additional 10 minutes until the carrot is tender.
  4. Stir in the snow peas and chopped spring onions, cooking for another 2-3 minutes until they are bright and tender-crisp.
  5. Season the soup with soy sauce, sesame oil, salt, and black pepper to taste. Stir well and remove from heat.
  6. Serve hot, garnished with extra spring onions if desired.
