- Black chicken - 500 grams, cut into pieces

- Goji berries - 30 grams
- Dried Chinese mushrooms - 30 grams, soaked and sliced
- Red dates - 10 pieces, pitted
- Soy sauce - 2 tablespoons
- Salt - 1 teaspoon
- Spring onions - 2, chopped for garnish
- Black pepper - to taste
- Sesame oil - 1 teaspoon
Steps
- In a large pot, add 1.5 liters of water and bring it to a boil.
- Once boiling, add the black chicken pieces and cook for 5 minutes to remove any impurities. Then, drain and rinse the chicken pieces.
- Return the cleaned chicken to the pot and add the sliced ginger, minced garlic, goji berries, soaked mushrooms, red dates, soy sauce, and salt.
- Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for about 90 minutes, covered.
- After 90 minutes, check the chicken for tenderness; it should be fully cooked and fall off the bone easily.
- Season with black pepper and drizzle with sesame oil before serving.
- Ladle the soup into bowls and garnish with chopped spring onions.
