  • Red bell pepper - 1 medium, diced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess water, then cut it into 1-inch cubes.
  2. In a bowl, mix the cubed tofu with cornstarch, salt, and pepper until well-coated.
  3. Heat sesame oil in a non-stick skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove tofu from the skillet and set aside.
  4. In the same skillet, add minced garlic and ginger, and sauté for 1 minute until fragrant.
  5. Add the diced red bell pepper and cook for another 2-3 minutes until slightly softened.
  6. Stir in the black beans and cooked tofu, then pour in the soy sauce. Mix gently and cook for another 2-3 minutes to heat through.
  7. Remove from heat and garnish with chopped green onions and cilantro before serving.
