  • Green onions - 30 grams (2 tablespoons), chopped
  • Cilantro - 15 grams (1/2 cup), chopped
  • Corn tortillas - 4 small (about 15 cm diameter)
  • Sriracha sauce - 5 ml (1 teaspoon), optional
  • Lime - 1, cut into wedges

Steps

  1. In a medium bowl, mash the cooked black beans with a fork or potato masher, leaving some chunks for texture.
  2. In a skillet over medium heat, add sesame oil, minced garlic, and grated ginger. Sauté for about 1 minute until fragrant.
  3. Add the mashed black beans to the skillet, followed by soy sauce. Mix well and cook for an additional 5 minutes, stirring occasionally.
  4. Warm the corn tortillas in a separate pan or microwave until pliable.
  5. Assemble the tacos by placing a generous spoonful of the black bean mixture onto each tortilla.
  6. Top with chopped green onions and cilantro, and drizzle with Sriracha if desired.
