- Black beans - 150 grams (dry)
- Vegetable broth - 500 ml
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Spring onions - 2, chopped (white and green parts separated)
- Carrot - 1 medium, diced
- Bell pepper - 1 small, diced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Lime - 1, juiced
- Fresh cilantro - for garnish
Steps
- Rinse the black beans under cold water and soak them in water for at least 4 hours or overnight.
- After soaking, drain the beans and place them in a pot with 500 ml of vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
- In a separate pan, heat the sesame oil over medium heat. Add the minced garlic, grated ginger, and the white parts of the spring onions. Sauté for about 2-3 minutes until fragrant.
- Add the diced carrot and bell pepper to the pan, stirring and cooking for another 5 minutes until they begin to soften.
- Stir in the coriander powder, cumin powder, black pepper, and salt, cooking for an additional minute.
- Once the black beans are cooked, add them along with their broth to the vegetable mixture. Stir in the soy sauce and simmer for another 10 minutes to let the flavors meld.
- Adjust seasoning with salt and lime juice to taste.
- Serve hot, garnished with the green parts of the spring onions and fresh cilantro.
