- Black beans (cooked or canned) - 1 cup (240g)
- Vegetable broth - 1 cup (240ml)
- Onion (finely chopped) - 1/2 medium (75g)
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Green onions (chopped) - 2 stalks
- Red bell pepper (diced) - 1/2 medium (75g)
- Corn (frozen or fresh) - 1/2 cup (75g)
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is cooked and liquid is absorbed.
- While the rice is cooking, heat the sesame oil in a large skillet over medium heat. Add the chopped onion, garlic, and ginger, sautéing for about 3-4 minutes until the onion is translucent.
- Add the diced red bell pepper and corn to the skillet, cooking for an additional 3-4 minutes until they are tender.
- Stir in the cooked black beans, soy sauce, and cooked rice, mixing well to combine. Season with salt and black pepper to taste.
- Cook for another 2-3 minutes until everything is heated through.
- Serve hot, garnished with chopped green onions.
