  • Jasmine rice - 1 cup (200g)
  • Black beans (cooked or canned) - 1 cup (240g)
  • Vegetable broth - 1 cup (240ml)
  • Onion (finely chopped) - 1/2 medium (75g)
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce - 2 tablespoons (30ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Green onions (chopped) - 2 stalks
  • Red bell pepper (diced) - 1/2 medium (75g)
  • Corn (frozen or fresh) - 1/2 cup (75g)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is cooked and liquid is absorbed.
  3. While the rice is cooking, heat the sesame oil in a large skillet over medium heat. Add the chopped onion, garlic, and ginger, sautéing for about 3-4 minutes until the onion is translucent.
  4. Add the diced red bell pepper and corn to the skillet, cooking for an additional 3-4 minutes until they are tender.
  5. Stir in the cooked black beans, soy sauce, and cooked rice, mixing well to combine. Season with salt and black pepper to taste.
  6. Cook for another 2-3 minutes until everything is heated through.
  7. Serve hot, garnished with chopped green onions.
