Ingredients

  • Pork ribs - 500 grams
  • Fermented black beans - 30 grams
  • Soy sauce (low sodium) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 tablespoon
  • Szechuan peppercorns - 1 teaspoon
  • Red chili flakes - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Green onions (sliced) - for garnish

Steps

  1. Prepare the marinade by crushing the fermented black beans in a bowl and combining them with soy sauce, rice vinegar, minced garlic, grated ginger, Szechuan peppercorns, red chili flakes, and sesame oil.
  2. Rub the marinade generously over the pork ribs, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
  3. Preheat your oven to 150°C (300°F). Place the marinated ribs on a baking tray lined with aluminum foil.
  4. Cover the ribs with another piece of foil to lock in moisture and bake for 2 hours until the ribs are tender.
  5. After 2 hours, remove the top foil and increase the oven temperature to 220°C (425°F). Bake for an additional 15-20 minutes or until the ribs are caramelized and slightly crispy on the edges.
  6. Remove from the oven and let rest for 5 minutes. Slice the ribs and garnish with sliced green onions before serving.
