Ingredients
- Pork ribs - 500 grams
- Fermented black beans - 30 grams
- Soy sauce (low sodium) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic (minced) - 3 cloves
- Ginger (grated) - 1 tablespoon
- Szechuan peppercorns - 1 teaspoon
- Red chili flakes - 1 teaspoon
- Sesame oil - 1 tablespoon
- Green onions (sliced) - for garnish
Steps
- Prepare the marinade by crushing the fermented black beans in a bowl and combining them with soy sauce, rice vinegar, minced garlic, grated ginger, Szechuan peppercorns, red chili flakes, and sesame oil.
- Rub the marinade generously over the pork ribs, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
- Preheat your oven to 150°C (300°F). Place the marinated ribs on a baking tray lined with aluminum foil.
- Cover the ribs with another piece of foil to lock in moisture and bake for 2 hours until the ribs are tender.
- After 2 hours, remove the top foil and increase the oven temperature to 220°C (425°F). Bake for an additional 15-20 minutes or until the ribs are caramelized and slightly crispy on the edges.
- Remove from the oven and let rest for 5 minutes. Slice the ribs and garnish with sliced green onions before serving.
