Ingredients

  • Black bean noodles - 200 grams
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Green onions (sliced) - 2 stalks
  • Bell pepper (thinly sliced) - 1/2 medium
  • Carrot (julienned) - 1 medium
  • Snow peas - 100 grams
  • Cilantro (chopped) - 2 tablespoons
  • Chili flakes (optional) - 1/2 teaspoon

Steps

  1. Boil a pot of water and cook the black bean noodles according to the package instructions, usually about 5-7 minutes, until al dente. Drain and set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add minced garlic and grated ginger, cooking until fragrant, about 1 minute.
  3. Add the sliced bell pepper, julienned carrot, and snow peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  4. Add the cooked black bean noodles to the skillet, along with the soy sauce and chili flakes (if using). Toss everything together gently for about 2 minutes to combine and heat through.
  5. Remove from heat and top with sliced green onions and chopped cilantro before serving.
