- Eggplant - 1 medium (about 250g)
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Black bean sauce - 3 tablespoons
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Brown sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped (for garnish)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat the grill to medium-high heat.
- Slice the eggplant into 1cm thick rounds and sprinkle with a little salt. Let them sit for 10 minutes to draw out moisture.
- In a small bowl, mix the black bean sauce, soy sauce, rice vinegar, brown sugar, minced garlic, and minced ginger to create the marinade.
- Rinse the eggplant slices under cold water and pat dry with a paper towel to remove excess salt.
- Brush both sides of the eggplant slices with vegetable oil, then coat them with the marinade, reserving some for later.
- Place the eggplant on the preheated grill and cook for about 4-5 minutes on each side, until they are tender and have nice grill marks.
- Once grilled, remove the eggplant from the grill and drizzle with the reserved marinade and sesame oil.
- Garnish with chopped green onions and sesame seeds before serving.
