Ingredients

  • Eggplant - 1 medium (about 250g)
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Black bean sauce - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the eggplant into 1cm thick rounds and sprinkle with a little salt. Let them sit for 10 minutes to draw out moisture.
  3. In a small bowl, mix the black bean sauce, soy sauce, rice vinegar, brown sugar, minced garlic, and minced ginger to create the marinade.
  4. Rinse the eggplant slices under cold water and pat dry with a paper towel to remove excess salt.
  5. Brush both sides of the eggplant slices with vegetable oil, then coat them with the marinade, reserving some for later.
  6. Place the eggplant on the preheated grill and cook for about 4-5 minutes on each side, until they are tender and have nice grill marks.
  7. Once grilled, remove the eggplant from the grill and drizzle with the reserved marinade and sesame oil.
  8. Garnish with chopped green onions and sesame seeds before serving.
