Ingredients

  • Cooked white rice - 2 cups
  • Canned black beans - 1 cup, rinsed and drained
  • Carrot - 1 medium, diced
  • Green bell pepper - 1/2, diced
  • Green onions - 2, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten
  • Fresh cilantro - 2 tablespoons, chopped (optional)

Steps

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and diced carrot, and sauté for about 2 minutes until fragrant.
  3. Stir in the green bell pepper and continue to cook for another 2 minutes.
  4. Add the cooked rice to the skillet, breaking up any clumps with a spatula.
  5. Pour in the soy sauce and sesame oil, mixing well to combine all ingredients.
  6. Add the rinsed black beans, and stir everything together to heat through, about 3-4 minutes.
  7. Push the rice mixture to one side of the skillet and pour the beaten egg into the empty side, scrambling it until fully cooked.
  8. Mix the scrambled egg into the rice mixture and add the sliced green onions, salt, and black pepper.
  9. Remove from heat and garnish with fresh cilantro if desired. Serve hot.
