Ingredients

  • all-purpose flour - 250 grams
  • active dry yeast - 5 grams
  • sugar - 10 grams
  • warm water - 150 ml
  • black beans (cooked) - 200 grams
  • ginger (grated) - 1 teaspoon
  • garlic (minced) - 2 cloves
  • soy sauce - 2 tablespoons
  • sesame oil - 1 tablespoon
  • green onions (chopped) - 2 tablespoons
  • salt - 1/2 teaspoon
  • pepper - 1/4 teaspoon

Steps

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
  2. In a large bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture.
  3. Mix the flour into the yeast mixture until a dough forms. Knead on a floured surface for about 10 minutes until smooth.
  4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 40 minutes or until doubled in size.
  5. In the meantime, prepare the filling by mashing the black beans in a bowl. Add grated ginger, minced garlic, soy sauce, sesame oil, chopped green onions, salt, and pepper. Mix well.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and flatten it into a disc.
  7. Place a spoonful of the black bean filling in the center of each disc. Gather the edges and pinch to seal, forming a bun.
  8. Place the baozi on a parchment-lined bamboo steamer or steaming rack. Let them rest for another 10 minutes.
  9. Steam the baozi over boiling water for about 15 minutes until fluffy and cooked through. Serve hot.
