- all-purpose flour - 250 grams
- active dry yeast - 5 grams
- sugar - 10 grams
- warm water - 150 ml
- black beans (cooked) - 200 grams
- ginger (grated) - 1 teaspoon
- garlic (minced) - 2 cloves
- soy sauce - 2 tablespoons
- sesame oil - 1 tablespoon
- green onions (chopped) - 2 tablespoons
- salt - 1/2 teaspoon
- pepper - 1/4 teaspoon
Steps
- In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
- In a large bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture.
- Mix the flour into the yeast mixture until a dough forms. Knead on a floured surface for about 10 minutes until smooth.
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 40 minutes or until doubled in size.
- In the meantime, prepare the filling by mashing the black beans in a bowl. Add grated ginger, minced garlic, soy sauce, sesame oil, chopped green onions, salt, and pepper. Mix well.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and flatten it into a disc.
- Place a spoonful of the black bean filling in the center of each disc. Gather the edges and pinch to seal, forming a bun.
- Place the baozi on a parchment-lined bamboo steamer or steaming rack. Let them rest for another 10 minutes.
- Steam the baozi over boiling water for about 15 minutes until fluffy and cooked through. Serve hot.
