Ingredients

  • All-purpose flour - 200 grams
  • Cornmeal - 50 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Vegetable oil - 60 ml
  • Water - 100 ml
  • Canned black beans - 1 cup (240 grams), drained and rinsed
  • Corn kernels - 1 cup (150 grams), fresh or frozen
  • Red bell pepper - 1/2, diced
  • Green onion - 2, chopped
  • Cumin powder - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Shredded cheese (optional) - 100 grams
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, and salt. Mix well.
  3. Add the vegetable oil and water to the dry ingredients and knead to form a smooth dough. Cover and let it rest for 15 minutes.
  4. In another bowl, mix the black beans, corn, diced red bell pepper, green onion, cumin, and chili powder. Season with salt and pepper to taste.
  5. Roll out the dough on a floured surface to fit a 9-inch (23 cm) pie dish or pizza pan.
  6. Transfer the rolled dough to the dish, pressing it into the bottom and up the sides.
  7. Spread the black bean and corn mixture evenly over the crust. If using, sprinkle shredded cheese on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the crust is golden and the filling is heated through.
  9. Remove from the oven and let it cool slightly before slicing. Garnish with fresh cilantro before serving.
