- Cornmeal - 50 grams

- Vegetable oil - 60 ml
- Water - 100 ml
- Canned black beans - 1 cup (240 grams), drained and rinsed
- Corn kernels - 1 cup (150 grams), fresh or frozen
- Red bell pepper - 1/2, diced
- Green onion - 2, chopped
- Cumin powder - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Shredded cheese (optional) - 100 grams
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, and salt. Mix well.
- Add the vegetable oil and water to the dry ingredients and knead to form a smooth dough. Cover and let it rest for 15 minutes.
- In another bowl, mix the black beans, corn, diced red bell pepper, green onion, cumin, and chili powder. Season with salt and pepper to taste.
- Roll out the dough on a floured surface to fit a 9-inch (23 cm) pie dish or pizza pan.
- Transfer the rolled dough to the dish, pressing it into the bottom and up the sides.
- Spread the black bean and corn mixture evenly over the crust. If using, sprinkle shredded cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden and the filling is heated through.
- Remove from the oven and let it cool slightly before slicing. Garnish with fresh cilantro before serving.
